Today, we share our authentic recipe with a special twist: featuring our Lemon-Infused Extra Virgin Olive Oil.
Ingredients
- 250g (about 9 oz) spaghetti or linguine
- 2 tablespoons Giacoma & Gita Lemon-Infused Extra Virgin Olive Oil
- Zest of 1 organic lemon
- Juice of ½ lemon
- 60g (about ¼ cup) grated Parmigiano-Reggiano cheese
- 1 tablespoon unsalted butter
- Salt and freshly cracked black pepper, to taste
- Fresh basil leaves, for garnish (optional)
Instructions
1. Cook the Pasta
Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, according to package instructions. Reserve about 1 cup of pasta cooking water before draining.
2. Create the Sauce
In a large skillet over low heat, add the Lemon-Infused Olive Oil and the butter. Let them gently melt together.
Stir in the lemon zest and lemon juice. Warm through for about a minute, allowing the lemon aroma to bloom.
3. Combine
Add the drained pasta to the skillet, tossing it to coat in the lemony oil. Gradually add a little reserved pasta water to create a silky, light sauce.
Sprinkle the Parmigiano-Reggiano over the pasta, stirring continuously until it melts into the sauce. Add more pasta water if needed to reach a luscious, creamy consistency.
Season with salt and freshly cracked black pepper to taste.
4. Serve
Plate the pasta immediately, drizzling a little extra Lemon-Infused Olive Oil over the top. Garnish with fresh basil leaves if desired.
